Jerulsalem artichokes? What to do with them all?

I planted 2 bulbs and am digging them up today. I have a bucket load so far and am still going.

Anyone got any recipes?

They make great nibbles with a dip. Instead of potato chips.

They make a great mash as well - with some spud and lots of butter, salt and pepper if you like.

Word of warning: many people refer to them as "fartichokes"  

Go easy on them !
