You can put it into holiday mode but if it is going to be a few months it would be better to close it. Why pay for an inactive store?

Seller Hub gives you unsold for 90 days. If longer than that, they would disappear.
I have all mine in Notepad files. And all the pics on my computer.
If it was me, I'd be creating templates for them in any spare time I had (Seller Hub>Inventory). They last there pretty much forever, though they do eventually drop the pics, but that takes over a year. It seems you can have about 400 templates. Only takes a couple of minutes per if you have the information to hand.

I'm pretty sure you can download all current listings to a CSV file and then upload that when you get back, however please double-check or test this as it's not something I've ever done myself, so wouldn't want you to take it as gospel and end listings, only to come back months later and have to start from scratch.
