At the end of the day it is up to the seller to decide which courier they use.
If they offer courier X, and you dont like it you can ask them to use Y. But if they say no, thats their call.
And you have the option of not buying or going with their option.
The power is in your hands, if they dont want to use your preferred courier, buy else where. Nothing is unfair,

a) brand new and does not know how the site works
b)Has their pants on fire

If the item is too large for Australia Post, then a courier would be the only option.
If this is not the case look elsewhere.

I read the heading (as best I could anyway) as the OP saying the seller told them that 'eBay chooses which courier is used'
Rather than the seller had to use 'a' courier
