Could someone give me directions on:
How do I go about setting up for "Private Listing, so as only myself and the Bidder can view it?
ALSO, I have "Blocked a couple of Members" from Bidding, as they have been Playing around constantly, Bidding and not Paying.
From this, my problem is that ebay after an Automatic 4 day "Grace to them, plus a further 4 day grace, to pay" are not removing their data from my SOLD Section. How do I fix this?

Did you open NPB disputes and then close the disputes 4 days later ?
If you don't eBay have no idea that the buyer has not completed the transaction and the items will remain in the sold list until you follow the full procedre.
As to private bidding:
