Only if they purchased them separately. If they made separate purchases, you can exclude one from a combined invoice. If they entered 5 into the quantity field and it came through as a single purchase, it's not possible to adjust the quantity, but a possible work-around is to discount the postage by an amount equal to one item cost, if the P&H amount is high enough to discount by the item price.
