Hi,
I've listed an item as an auction, and someone has approached me in messaging for a price that I'm happy with. Everything is fine, they are ready for payment and I'm ready to ship the item. The problem is I want to make it so they can pay the exact amount so it doesn't run out by the bid time, so I want to make the item a buy now item rather than a bid. How do I change it or refuse any other offers so that they can pay the amount they said they would nice and simple??

You have many bids, so you can't!!!!

So what can I do? Should I end the listing? Or should I get them to bid the amount we agreed on?

They should take their chances like the other bidders.
They can bid what they wanted to pay, but if someone bids higher, then the outcome for you is better.
If they want it, then they can bid higher.
Why would you want to end an auction when you have bids?
Tell them it's not allowed when you have bids.

Don't end the listing if you want to sell on eBay again.....you will enrage a lot of complainants....it has 1 &1/2 days to go....are you not confident enough to let it run?
You might end up with more.... (buyer who offered probably knows that)
