Who actually writes the Urban Dictionary? Do entries have to be submitted to an editorial committee who decide whether or not they are worthy of inclusion or is it a bit like Wikipedia and anyone can put in any word they like and propose a meaning for it?

I certainly agree with regard to hens. They are silly creatures and one agitated chicken can be a screeching, flailing featherstorm all on its own. Geese, on the other hand, are rather substantial birds and in a gaggle can be quite intimidating. They also make useful watchdogs and a gaggle of geese is supposed, on one occasion, to have saved Rome from a Barbarian invasion by rousing the garrison with their honking.
