Recently purchased a pair of shoes which after 2 days wear starting falling apart. Contacted the Seller and within 12 hours they had responded, apologised, and refunded my full payment. I had already posted feedback when I received the shoes but can I now post another Feedback on the Seller's prompt resolution and refund of my payment?

You can ask the seller to send you a feedback revision request if you wish to upgrade the feedback.
