Many times it happens that a one click bid wins in the last second after your bid, but the new one click bidder has not bid before (at least not on the list of bidders) How does this work?

you can google "snipe service" to find some. I have not ever used a snipe service, but I have read that Gixen is good (and free for basic sniping).
Be aware though, that if you sign up for one of the external snipe services you will need to provide them with your eBay ID and your eBay password as the snipe service actually logs in on your ID to place the last seconds bid. If you are the sort of person who is very security conscious you might find it hard to supply this information. If that is the case, then simply start a new eBay ID just for the items you wish to snipe on. It sort of quarantines your main eBay ID from any sniping activity. Once you have used the snipe on this new ID and feel confident that it is okay then you can start to use it on any of your eBay IDs.

I used to use www.ezsniper.com but after the first few bids you're required to pay 10c per winning snipe. So, Gixen is probably a better choice as it's free. I've never used it, though.
