Can someone please explain how i can set my default searches to reflect Australia ONLY instead of automatically defaulting to worldwide?

You can't as eBay don't want you to miss out on those "fabulous" bargains from overseas.

The only way to do it is to do a search and then save that search,(that way they are set for next time and one click

on your saved search gets you there),
