I tasted the best cake I have ever had in my life yesterday!
But my (Filipino) friend said she has no idea what it is called. She says it is a traditinal celebration cake but she has never made it and only ever buys it. All her friends said the same thing.
It looked like a sponge baked in custard. It was almost flan like but definitely spongy instead of all custard but the sponge was extremely light and soft and moist with the custard.
Anyone know what it is called?

Wondering if this is it - it has whipped egg whites mixed into the cake mix then custard then baked.

Im not Filipino, but I think I might know what you mean- leche flan cake..
My Uncles family lived in Manila for 10 years and we visited a couple of times. The housekeeper would always make this as a special treat- Ive never tried to cook it, but it is very delicious...

I think its called leche cake because of the mix of the evaporated and condensed milk...I remember it being very sweet..but yum

It wasn't a leche cake as I have tasted these. But it did have a slight custard top like the leche in your picture.
