I prefer fresh pasta over the dehydrated hard stuff in the stores, so usually make my own, but I've never known how to make round noodles such as Hokkein, and the store bought ones are pretty blah
I saw it on you tube and thought I'd have a go.
It's pretty tricky. I can get in four pulls, sometimes 5, but still haven't managed to pull it the required 6 times without it snapping.
Anyone else make thier own hand-pulled noodles?

a Hokkein noodle is 7mm diameter.
And if you work too slowly, it heats up the dough causing it to snap prematurely.
