What difference does it make, in this century, what they did a couple of thousand years ago?
Christianity was probably not even a thing that had been invented in their day.

According to Matthew 5: 17 Jesus himself said "Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them."
I doubt whether he or Mary or Joseph or any of his immediate disciples ever thought of themselves as anything but followers of Judaism.

It still baffles me how gullible Joseph must have been to believe Mary got pregnant without having sex.

why does it it baffle you?
If you are a believer and the bible is true, then Mary's pregnancy was a miracle worked by God (to whom all things are possible) and revealed to Joseph in a dream.
If you are a nonbeliever and the bible is not true, then there was no Mary to get pregnant in the first place and no Joseph to either believe or disbelieve her.
so what's to be baffled about?

According to several translations, Joseph was embarrassed and shamed by Mary's pregnancy (knowing that he was not the father) and sought to terminate the engagement quietly (to save Mary from further shame), but was visited during a dream by an angel who explained things. When Joseph woke, he thought things over and changed his mind, continuing with the marriage.
