Karen...........you would love the dish my MIL does then............she puts tomato....zucchini..........onion in a dish to bake...........with bread crumbs over the top.
I make it occassionally here...............but I can not eat it due to my allergy to tomato.
My son loves tomato and onion fried up over fresh beans.

Spot on Deb................if it was anyone other than me who posted the lolcats nothing would be said.
I proved that point to myself one last year.
The lolcats I posted were the ones that had been in that weeks Caturday thread...............no complaints................until I posted them...:^O

Do you know if you can get low fat/salt riccotta.
I would be able to use up the spinach with that recipe too.
Laney.............I hate hate hate carrot.................I eat it raw...........not cooked.

Yum, my Mum used to make a recipe like that. I love zucchinis so much I usually steam them and sprinkle with pepper then eat... Or even more delicious with potato. I like them roasted in Moroccan veggies too.
Yep Deb, it depends on who posts. Such intelligence :^O

Flashie, I don't like carrot boiled or steamed unless it is tossed in butter and honey afterwards, but I do love it baked.

Flashie,. I might be wrong. Actually I probably AM wrong, but I used to make fresh ricotta by filtering yoghurt through a stocking hung over a sink overnight. Maybe it's not ricotta... But we used it in spinach triangles etc. You could use low fat yoghurt. It was delicious, especially with herbs mixed in.
