Can an athiest please tell me why they get upset when someone takes hostages and kills them or when someone like Islamic State beheads children?

I do not understand you .On the one hand you tell me you believe in evolution and survival of the fittest and on the other you get upset when the species does exactly what darwin says it will do.DISCUSS as bob would say.

Well man once trevelling across the continents, branching off etc and effectively cut off from original tribes as new tribes settled distinct mutations became advantageous. In Europe for instance (oddly one of the few last places for us to reach and already inhabited by Neanderthal man) there is very little sun light to absorb vitamin B from so albionism that would still occur in Africa and been crippling in those conditions became benefitial as rickets etc crippled darker skin humans. Again simplistic explanantion.

My mom used to be involved with an athiest, (Dave) he was the next door neighbor who asked her out after dad left her. It was about the best thing for mom at the time cause she was in a bad way. They had gotten pretty serious, even though he was an athiest and claimed not to believe in God, He was a really nice guy, not selfish, lived a simple life and would donate large amounts of money at a charity on a whim. Mom though, and i guess you can say me as well, come from a deeply religious family I have uncles and cousins who are preachers, so as you can imagine, my mom's many sisters, did not approve of the match.

But I liked him, he would talk your ear off if you let him, knew alot about politics, Him and i both had an intrest in Nascar, mom dodn't care for it though. about the only thing we argued over was guns, we disagreed big time about that subject, He wanted them all banned and taken from everyone. But far as religion, we just didn't discuss it, mom and i never tried to push God on him, and he never well almost never, made fun of our beliefs.

Adaptation. The earliest humans are thought to have lived in Africa and in a hot climate  dark skins gave you a better chance of surviving. As humans spread out into cooler climates dark skin became less and less advantageuous - it inhibits the absorbtion of vitamin D from sunlight, so obviously those born with a slightly lighter skin had a slightly better chance of surviving to pass on their "light" genes to their descendants.

I'm not sure about looks, but it could be something a simple - and random - as a genetic variation in the first handful of humans to move into Asia.
