I have so many songs that would fit the thread theme, but I happened to catch some of this concert on Spanish radio one evening over Christmas. It was from the Spanish island of Tenerife, and included this lovely song by a Tenerife choir. I had never heard of them before, but they are apparently quite well known. This video is from that concert, and I think this was the song that I first heard:
