I love raspberries.

 

My last trifle was made with raspberries and fresh berries but why are they so expensive at Christmas?

Joono, here's a great recipe for you.

Asparagus - say 4 - 6 per person
Smoked salmon
French onion dip (or other creamy dip)
Capsicum (any colour)

Wrap the asparagus in the smoked salmon. Just put a slice of smoked salmon around the middle of the stalk. As you wrap them, place the asparagus sticks on a lightly oiled baking tray and pre-heat the oven to 180.

When you've wrapped everything, put the tray in the oven. You want the asparagus to be cooked, but still crunchy, about 10 minutes, but keep checking after 5.

Take the seeds and white stuff out of the capsicum/s, chop into thirds to make three rings.

Set the capsicum rings on plates and fill with dip.

Add the asparagus when it's cooked.

This looks really pretty, takes little time, and tastes delicious with the different tastes and textures.

The capsicum rings can also be used with other dishes to hold dips, thick sauces, chutneys etc.

That does sound really nice Katy and I know my son would love it.  He has a thing for sliced smoked salmon at the moment.

You can also use capsicum slices (bell pepper) to put an egg in on the bbq - or anywhere.

I do like that idea Sandy.  sort of like an edible egg ring.

 

Correction from my post this morning.  I bought more asparagus today and it was $1.98 bunch.  That must have been a good special on the weekend because I only paid 99c.  I should have bought more.

Brocolli soup sounds good. Brocolli is cheap here at the moment.

I love brocolli soup, but can't imagine making it without milk.  I also put chunks of chicken in mine.

I make a lot of soup as my daughter would live on it.  The recipe for all types of vegie soup is much the same.  For pumpkin, I fry off some onion then add chicken stock, potato, a few carrots, celery if I've got it and the majority of pumpkin, simmer until soft then blend it with the stick blender.  Add cream or sour cream when serving.  I make broccoli soup the same way - the same ingredients except no pumpkin and the majority of broccoli.  Same with zucchini soup.  My secret ingredient is "massel" chicken stock powder.  No articial colourings, flavours etc and OK for vegetarians.
