I realised yesterday, that while I like minced beef I know very few recipes for it:
Spag bol
Stuffed capsicums
Meat loaf
Meatballs
Recipes, suggestions, and ideas are all welcome.

That sounds alright Deb.
I was just thinking back to the days when a beef curry was a pot of mince and onion with some Keens curry powder thrown in and if you wanted to be really sophisticated you could chuck in some sultanas too.

A favourite from childhood, mum used to make it a couple of times a month
Hawaiian casserole
brown the mince with diced capsicum and onion
stir in a couple of tablespoons of tomato paste, and a tin of drained pineapple chunks
add a couple of tablespoons of flour to the pineapple juice, stir in then let simmer until thickened and the tomato paste no longer has that uncooked taste.
serve on rice.
you can add any vegies you like to it as well.

Porcupine Casserole
Serves 4
Meat Balls
600g lean beef mince
1/3 cup raw long grain rice
1 Teaspoon beef stock powder
1 egg white
Sauce
1 x 420g can tomato soup
1 x 425g can crushed tomatoes
½ cup onion finely chopped
1 cup water 2 teaspoons beef stock powder
1 teaspoon dried oregano 1 teaspoon crushed garlic
Preheat oven to 190C fan forced.
In a large casserole dish (that has a lid) combine all ingredients listed to make the sauce. Pour into casserole dish and leave to one side. In a medium sized mixing bowl combine all ingredients listed to make meat balls. Using your hands mix together well. Shape into 12 round meat balls, add to casserole dish and bake for 1 hr.
Variations to this recipe are replace beef with either 600g lean chicken mince, or 600g lean pork mince.

I usually double up on the porcupine Casserole it freezes well, oh and I serve it with mashed potatoes and peas. This recipe is in the Too Good to be True recipe book by Annette Sym.

Beef Tortilla Stack.
750g lean beef mince
5 Tortilla sheets
½ cup grated 25% reduced fat tasty cheese
1 cup onion finely diced
1 teaspoon crushed garlic
½ cup corn kernels
1 cup diced capsicum
1 x 425g can crushed tommies
3 Tablespoons tomato paste
1 ½ cups water
1 teaspoon beef stock powder
1 x 35g packet taco seasoning
Cooking spray
Preheat oven to 180C fan forced.
In a large saucepan coated with cooking spray sauté mince. When cooked drain and place in a bowl. Leave to one side. Add all remaining ingredients to the saucepan except the tortilla sheets and cheese. Bring mixture to the boil, simmer 10 mins. Remove 1 cup of the tomato sauce and leave to one side (this will go on the top). Add the mince to the remaining sauce and bring to the boil. Coat a quiche or pie plate (23cm) with cooking spray and lay 1 tortilla sheet on base and spread 1 ½ cups of mince sauce over sheet , repeat this 3 times. Top with last tortilla sheet and cover with reserved tomato sauce, sprinkle cheese over top.
Bake for 30mins or until cheese has browned.

I'd never heard of Porcupine Casserole before but it reminds me of an old recipe using Rice a Riso (sp)
I don't see it on the shelves these days, I wonder if they still make it?

Beef and Vegetable Pie
500g diet mince
1 cup of each of finely chopped onion, grated carrot, grated zucchini
1 cup frozen peas
1 cup frozen corn niblets
3 Tablespoons low joule gravy powder (gravox)
1 teaspoon worcestershire sauce
1 Tablespoon tomato sauce
2 Teaspoons beef stock powder
2 cups hot water
¼ cup water
7 sheets filo pastry
Cooking spray
Preheat oven 180C fan forced
FILLING
Brown mince in a large pan that’s been sprayed with cooking spray, drain and leave to one side. In same pan spray and saute onion for 2 mins stirring constantly. Add carrots zucchinis, peas and corn to pot, cook for 2 mins, stirring well. Blend stock powder in hot water , add to pot, bring to boil, simmer covered for 5 mins. Stir in tomato and Worcestershire sauce. Mix gravy powder with ¼ cup water, stir quickly into pot to avoid lumps. Add mince stir well. Leave to cool.
Preheat oven 200C, spray 20CM pie dish with cooking spray. Fold out filo pastry sheets, cut each sheet in half (8 for base 6 for top) Layer pie dish with 8 cut sheets of pastry, in a rotating fashion, spraying with cooking spray between each sheet. Spoon mince mixture on top of layered pastry. With remaining sheets, repeat layering process, crinkle edges together, spray with cooking spray. Cut a small slit in top of pastry. Cook 30 – 35 mins or until golden brown.
Serve immediately as pastry will soften when left. To crisp again, either place back in oven or under grill.
Variations…………. replace beef with low fat chicken or lamb mince.
