How to contact ebay by phone in Australia?
You can't
The call center was overseas and has been closed for over two and a half years due to Covid
You can go to eBay Help at the top of any page to 'chat' with a CS agent
Or you can let other members here know your issue and we can advise you on what best to do
almost impossible has bee my experience today. when I asked for help I was seamlessly redirected to a third party help line, Just Answer (there are many others just waiting to rob you) which charges; before I knew it I was charged $66, which I only noticed by looking at my online bank statement. No direct info from Just Answer about the charge, no invoice. when I kicked up a fuss, firstly dealing with a robot, they all have a name and a picture, I was told the monthly m/ship charge was in the 'terms and conditions'; similar tactics that dating and other related sites use, click on anything and your up for hidden fees and charges. I rang the Australian help line all I got was a recorded message rdirecting me to website links, great! I got my money back, but it shouldn't be that hard. Scary that one cannot rely on help from eBay. If I wasn't a frequent buyer I'd cancel my membership.
At the top of EVERY page is an "eBay help" icon, click on that and you'll get eBay CS reps. If you click through some of the options, at the bottom you'll have the contact options and some of them have phone contact during business hours.
If you had read the T&C's of "Just Answer" you would have been aware of the charges, indeed you MUST have given them your bank details - didn't ANY red flags come up when you did that ???????

“Just answer” does not sound like “eBay”, surely…? Why on earth would you call some random so-called help line? It makes as much sense as my calling a random plumber when I have a problem with a shipment from Greece.
Use the eBay chat facility. Or ask here for member-to-member advice.
