I only get the option to use Direct Deposit for payments.
If you're listing using the eBay 'sell your item' form, about 60% down you get to "Decide how you'd like to be paid'.
This gives you a variety of options -
Safer payment methods - at least one required
PayPal
Merchant Account - Credit Card
You can also nominate Paymate if you qualify, however only a mug would pay that way.
Other payment options
Escrow doesn't exist on eBay Australia.
The bottom line is you must offer a 'safe' payment method - Paypal, paymate or merchant CC facility. I don't believe you would not have the option of one of those. In fact, I don't believe you would be able to complete a listing without nominating one of those.
The settings for normal listings are in your My eBay preferences section, under selling preferences >> payments from buyers.
I'm not sure if you have to set them up differently for stores, sorry.
One thing though, I did see that you have a section in your (currently empty) store stating payment is by Bank Deposit only. This is not allowed. You must offer a safe payment method, so you need to remove this wording.
You've also mentioned auctions. Do you plan to run auctions as well as the fixed price store listings? If not you may want to change the text to read "within 48 hrs of the listing ending" instead of "auction ending".
