I won an item last Sunday but cannot pick it up until next Saturday. Is it safe to pay for the item now using Paypal? Or should I ask the seller to wait for payment until just before I pick it up?

No, do not pay with PP.  Cash on pick up is the safest way for both seller and buyer.  There is no PP protection for pick up items.

As long as the seller is OK with you taking so long to collect the item.
