Incorrect postage paid via paypal. What to do from here. If i refund, can i still claim unpaid item if buyer refuses to pay?

I have not sent the buyer an invoice, yet they decided to pay 5 dollars postage and pay me within a couple hours of aucvtion end. I was not aware this could even be done since i have not quoted any form of postage whatsoever. 5 dollars will not even cover the cost of a box and registered post, let alone the actual postage itself. If i refund the amount via paypal, does this no longer protect me from a non payment dispute if the buyer refuses to pay the proper amount? I'm pretty annoyed that this can even happen in the first place.

First off, you shouldn't allow buyers to edit invoices.

Second, you don't need a set of scales (although they are cheap and handy for use in the kitchen). Unless the item is close to a price point - 500g, 1kg - you can get a fair estimate of weight by comparing it with something you already know the weight of. Like a can of bourbon and cola would be around 400g.

Third, no if you refund and they don't repay you wouldn't be able to open a NPB against them as they HAVE paid once.

A little bit of work when you're listing can save a lot of stress and hassles if things don't go smoothly. And the replies above have given you plenty of suggestions on how to proceed.
