I listed my item with Buy It Now but it has since been removed.  Is this because bidding has commenced?

Yes.

Once a bid is place it then becomes and auction only and you must sell to the highest bidder even if it is less than you had hoped for.

Never start an auction for less than you would be happy to sell the item for in case it only gets the one bid.
