Buyer refused express or tracking then put in a claim when the item went missing

Hi. My buyer really needed her item so I offered express postage to ensure quick and safe delivery. She refused and wanted standard post. I mailed her item the next morning and have receipts to prove it. She then put in a claim saying her item didnt arrive. Because she chose standrd post the item did not have tracking Ebay have found in her favour and taken the money form my PayPal account. I have receipts to prove the item was mailed and our messaging was done through Ebay to prove I offered her Express post which she did not want. How can I dispute Ebay's ruling?
