I have an item that I have sold and has been paid for in cash. I have read various online instructions as to how to close off the listing but I am none the wiser.
Can somebody give me the step by step instructions for closing a cash sale please.

You do not have any completed listings on this account
Is it the bike you still have listed?
Was the sale made 'on eBay' ?
If so, was the QR code used?
Otherwise you have no way of proving the buyer picked up the item if they open a dispute
Was the 'best offer' sent/accepted through eBay?
Have you tried Dave's suggestion that was given in another thread
which was
"Go to active listings in Seller Hub and select 'delete' "
