I've been a member since 2000, and today I was asked to update bank details - all legit. I just sold something and waded through a bunch of pages that didn't tell me much, but found it's on hold. So - how long is it on hold? Should I tell the customer to wait up to X days also?
Also there is no way on eBay to see where your payment is or why it's on hold or where the hell it even is? Not sure why this happens?

The payment will show in your seller hub if the buyer's paid through eBay checkout
If it is, you'll need to be signed up for managed payments and the funds will usually be on hold for 30 days
But has the buyer actually paid as it's a pick up only item and you'll need to be very careful
TBH, unless the payment situation can be sorted quickly, I'd recommend the seller apologises to the buyer and cancels the transaction.

100% yes. OP, you did not mention it was a pick up only item, and a very expensive camera.
This matters, A LOT. Items like these from inexperienced sellers are a scammers dream come true
This is a very very common thing, and you can search the forum for any number of posts from sellers who have sold expensive cameras and then been scammed
And buyers will only see you have no feedback as a seller showing, they are not going digging to find out how much you sold years ago
So unless it shows they REALLY have paid in your eBay (not a mocked up scam email sent by the buyer), do as advised and cancel the sale
It is hard for other members to attempt to help when we only get part of the story
