Buyer says item not as described, but if you look at the listing it is exactly as described

I sold a lot of nutrisystem desserts. I had 53 listed each type with the quantity of each. Buyer is now saying my listing said a "variety of desserts" and says there was only 52 and "too many of the chocolate pudding mix". Surprisingly the one missing is a chocolcate pudding mix.

So the guy obviously got the lot, tried it, decided he didnt like it and filed a complaint. My auction clearly said no returns, yet my money is on hold in paypal. Even if he returns the items im sure some of them will be beyond the expiration date now. Am I just screwed? Will ebay even read his complaint versus the auction and see that he is blatently lying?
