Why can't I see how many have been watching my listed item in the Australian site, yet it shows when I log into the US site?
It seems like they're 2 seperate entities.

YOU have to set up your seller my eBay preferences to show watchers, your my eBay page will only show what you have chosen to see.
btw watchers very rarely turn into buyers, so dont stress over them., they are usually other sellers with a similar item to sell

In Active Selling (the tab where your listings are), look to the right of the yellow bar and click on Edit. Then, from the dropdown menu, click on Customise.
There are two options - Choose Preset or Choose Your Own. Click on the latter. From there, find the column that says Interest Level.
Click on the "# watchers" box and it will then show you all the watchers.
