I will be away for Christmas from 23rd Dec to the 29th Dec inclusive. There are only three posting days in this period, if I extend my handling time to five days (currently 1 day) will this be sufficient to let customers know their item won't post till after the PHs or should I also include shop announcements? I don't want to close my shops as I will be able to handle enquires and respond to customers who purchase, I just won't be posting till the Wednesday after Xmas.

I'd also put announcements . . . just to be safe.

Put a large holiday notice on store front .... along with when the next postage day will be.
..... answer each sale with an email, asking if they noticed the holiday notice, and if not and they don't want to wait, they are welcome to cancel. 99% say they noticed and are fine with postage .... the occasional one that cancels, is very grateful for the email.
It takes a little bit of work each day, but is worth it. My sales over a week, are a welcome nest egg to return to.
