how do I change this in buik to only be 'buy it now'?

Go to your Selling Manager/Pro page and click on Active listings to bring up all your listings.  Either select them all, or just select the ones that have Make an Offer.  Click the Edit button and when it opens the bulk edit page, select all and then drop down the Edit Fields  menu.  Look for Price, quantity, Make an Offer.  In the pop up, ignore the other boxes and drop down the Best Offer menu and select Remove from all.  Don't forget to save changes.

and if you haven't got selling manager - you can still select all  your items and bulk edit.
