as the question asks- I had someone who didn't pay and wouldn't communicate with me I had to open an unpaid dispute- how can I leave them negative feedback so no-one else gets burned?

If you care to read eBay's site map you would know why. Sellers haven't been able to leave negative feedback for over 5 years - longer than you've been a member, even.
Prudent sellers have blocks in place for serial NPBs. The resolved NPB case will do more good than a negative that most (in my category anyway, where 95% of listings are BIN) wouldn't even be aware of.
Set your blocks, work on the fact that there will be a small percentage of buyers who don't pay, don't stress, read the boards for threads about similar issues (many), work WITH the system.

You can't. Once you've closed the dispute and put your blocks into place, that's as much as you can do.

Sellers used to be able to leave negative feedback but some left abusive comments and it was discontinued a few years ago. Buyers can still leave you a neg,I lost my 100% over a silly thing and all you can do is put buyer on your banned bidders list!!

Some sellers extorted positive feedback with the threat of a neg. Totally different, and eBay were justified in changing the rules. The ones that have always applied since the OP has been a member.

I doubt the neg would have any bearing on your sales. From what is written, anyway. And the fact it is the only one you have had. In the last 12 months.
