We have some products that can't ship overseas. e.g. wine and fragrance oil. Yet the rest of our products can.

You can choose which iems to ship internationally, but you may need to edit each item individually.
If you revise the item, go to postage policy. Push edit and under international postage there is a drop down box which will allow you to deny this.
I'm guessing you have a default policy applying to all your items.

can you give me some help on how to do? I have made the worldwide shipping global to our store. Does it have to done individually?

I have checked on a few of your items and they already have the worldwide set up so it looks all ok.
One thing I'd do is perhaps exclude some countries which you might have problems with.

yes we have no problem shipping overseas. But want to have the wine and lamp oils limited to just Australia. Wanted to know if we could make those products different. Have 2 set shipping rates on our store.

I too have a range of items which are for domestic purchase only.
This dealt with by having separate postage policies.
