eBay gives 4 days before seller is able to open dispute; most sellers give extra few days. I would definitely wait till Wednesday. But if there is no response close as soon as you can = 4 days later.

yes, the long weekend for some and the school holidays really mucks up the estimated paying time
were your buyers from Tas? Most other states have school holidays until 8 Oct.
I would give them extra time

while I don't want to come across as a naysayer, all people who delay their payment a significant length have some sort of extraordinary excuse... either that or
"Can't afford it anymore because of xxx"
"I didn't realise if I submitted a best offer it could automatically be accepted and I would be expected to pay"
"I won 3 of your items via best offer but only want to pay for the cheapest one" (that one annoys me the most really - ebay shouldn't allow people to make best offers on items if they haven't paid for ones already made)
The longer you sell for, the more you'll hear 🙂
You can open an unpaid item dispute as soon as the option is available, between the time it takes before you can open and case and the time before it closes is plenty of time for the buyer to get in contact with you... if they haven't been in contact with you by then you're better off just closing the case, recouping your fees and relisting.
