when I print out a postage label for an item, it automatically messages the buyer that the item has been sent.
and there isn't an option for me to change it.
sometimes I print the postage label out a day or two before I actually post it.

Same here, and it's really frustrating.
I have even tried adjusting the postage time to a few days away When i am getting ready to print. No matter what I do, it still marks it as posted.

your supposed to be printing the labels out with your back-pack mounted computer printing device while your standing in the line at the post office ready to hand the parcels to the happy smiling AP staff to be gently placed into the parcel friendly padded van to go on its careful way to your customer.

If you're using eBay's labels, as mentioned above you can change the postage date when you create the label - I know it still marks the item as posted, but I'm not sure what the automated email eBay sends says, or if it's delayed until the postage date (I suspect it is sent immediately, but you'd think-hope it advises the shipment is being 'prepared' like some others do, rather than notifying it's been posted).
If you use Click & Send, you can select the eBay item to auto-fill the buyer's address details, then delete them so that when you go to pay for the label, it isn't communicated back to eBay and the order doesn't get marked as posted until you do it manually.

I love the ebay postage system! I don't care. The buyer can see I have printed a label, so he knows at least I'm doing something.
(As a buyer, I hate the deathly silence when I buy something and the seller doesn't use ebay postage labels, or give feedback, or put in tracking numbers, so I feel like saying Hello? Hello? is anybody there? With my money?)
I really like the software, it's easy to use for a dumbo like me, you get a discount on most postage, what's not to like? It's about the only good thing that ebay have done for years.
