Full Listing filter selection has disappeared from top of page

The "Full Listing" filter selection has disappeared so I am unable to select "Australia Only" when I am searching for used, newly listed items. Because I can not select "Australia Only" I now get 50 plus pages of items which only 1 or 2 pages are of items from Australia.

Why has this function been removed from eBay Australia website?

You would need to ask eBay why you no longer see it

Maybe, since ‘Australia only’ does not mean what you seem to think it means, it is moot
