Works for me in a number of ways using Internet Explorer, either Edit Search or More Actions.
What browser are you using?
Another thing to try... open the search (not the edit option, just open it normally). Then click on Save Search at the top, and alter the email option on there - then click "Replace An Existing Search" and choose the same as original. and then Save - that should over-write it
