When I search “Haier pulley” or “Haier wheel”.
the app changes Haier to hair says “0 results found for Haier pulley so we searched for hair pulley” then displays 11 results for Haier pulleys. And a load of hair related stuff.
Why can’t the app just display the items I’m searching for in the first place instead of making me look through a ton of unrelated junk?

When eBay makes an inappropriate substitution like that, you can force eBay to search for your original search term without any substitutions by putting one of your search terms in quotes.
For instance to search for either a haier pulley:
https://www.ebay.com.au/sch/i.html?_from=R40&_nkw=%22haier%22+pulley&_sacat=0
Or haier wheel:
Or both at the same time:

The eBay app has always been problematic since it first started, just use a browser on your phone and go to the full main site.
