Why did the price at an auction jump up by over $100 in a single bid?

As per the screenshot, the price went up gradually and then one bid went up by $104. Did ebay accidentally use someone's maximum bid?

No, the bid  5 hrs ago, was simply higher than the previous bidders maximum bid.

As to what the current high bidders maximum is, is any ones  guess.

"Did eBay accidentally use someone's maximum bid' (with screen shot that leaves out automatic bids) is how it reads to me. Just my opinion . Why else would someone ask why the auction is working the way an auction is suppose to work?

I presumed they were asking for clarification on how the bidding. system works
