Hi, how do I add a note denoting a saved sellers product of interest to me?

Unfortunately you can't any more, not since eBay changed the name from Saved Sellers to Sellers you Follow (stupid name). You used to be able to create a text file below the seller's name but that function has now been removed, for reasons known only to eBay. 😞
