On purchasing an item as a gift - I'd like seller to mail it directly to recipient and not to my home address - how do I do that?

When you go through Checkout it shows the address you want the item sent to.
Change it before you pay with paypal and it will show to the seller as the postal address.
Don't forget to change it back before your next purchase.

On the checkout screen, eBay will display a screen that summarises your order details - at or near the top will be the delivery address, and you can change it there. (NB: Many sellers won't be able to post to alternative addresses if you just pay with your normal address as the delivery address, then message afterwards to try and change it).
It often looks like this (I've blanked out my personal details), but may look a little different depending on device and checkout version that's showing:

Just to add if you change the postal details to send to an address other than your own MAKE SURE you change it back after or any purchases will go to that address.
Made this error once and with my next purchase it was sent to the other address so I had to change the details back to have them posted to me when I made yet another purchse..

You should actually only have to do that if you tick the box "save this as my default address". It's always worth double-checking before confirming payment as eBay doesn't always do what it's s'posed to, but I often change addresses at the checkout screen, but never change the default delivery address, so my regular delivery address is always the one that's pre-filled when I go to checkout.
