I know you want the item, but if the due date estimate has passed, you really should open a dispute for non arrival. If you don't, you could lose both the item and your money. In you do get a refund, and the item does eventually arrived, you can repay the seller again. I've done that a couple of times.
If AP says they can't track it, then I agree with Lyndal that it probably hasn't even been posted yet. Chinese are good at getting fake tracking numbers. Open a dispute. You'll regret it later if you don't. Chinese are notorious for stringing things out past the cut off date. Don't be one of their victims.

Open a case for not as described, if you still have time. China Post would be slow over that period, given New Year, but that is not your problem.
I doubt it was outsourced - a lot of Chinese sellers claim their items are in Australia when they aren't.

"Open a case for not as described,"
Would Item Not Received be a more appropriate option?
Apologies if I have misread the OP.

Indeed. I was thinking about another post while replying to this one.

You can only make a claim through ebay if it is within 30 days of the due date. Shonky sellers will try and keep you on a string until it is too late but the good news is you can still make a claim through Paypal.

It should have been here by now even if the last estimated delivery date was 6-8 weeks after it was shipped.
If it is more than 7 days after the last estimated date you should open a dispute and get a refund.
The tracking should be showing as In Tansit after all this time....I suspect it has not been sent yet.

Sorry, but I disagree with other posters here. If the parcel is coming from China they quite often have strange tracking information. I buy a lot of small items from China, and many that are never marked as "in transit" arrive without problem. The numbers are never trackable from this end. They can also take considerable time to arrive, sometimes more than two months. You do not say what date in January you purchased. If it was late January then it is not surprising that it has not appeared yet. I would wait until it is at least 20 days after the last estimated date of arrival before doing anything other than asking the seller if it is posted. If it does not arrive by this time then message the seller again and politely advise them you have not received the item. Most times they will refund without having to involve eBay and get them offside.

All but one of your most recent feedback is from sellers in China,so if this item is from one of those it is almost certainly were it is coming from. The most recent has especially bad feedback for not sending items
