As per the subject ... I'd like to confirm a purchase rather than going straight to paypal and paying without any confirmation

I'm not sure what you mean by "unlink my Paypal account" because that would mean to me that you want to take your bank details off the account.
Perhaps you may be either having difficulties with their "one touch" payment system, if so you can opt out of that in the link below.

The only other reason I can see for your problem is that if the seller has "immediate payment required" on the listing, then opting to buy will take you straight to Paypal. If you decide not to pay immediately then the item will not be sold to you.

In checkout you should be able to select the method of payment.
Unless the seller only accepts PayPal.
But if the item is sent to you, then PayPal is the only way to protect yourself.
And if you want to purchase before payment then you can't for those sellers that have Immediate payment set on their items.
Best you can do is add it to your cart but that doesn't mean the item is reserved for you, anyone can still purchase it before you do.

I know It is somewhere in the paypal account as I unclicked the automatic payment a couple of years ago, sadly can't remember where in the account it is

It's definitely in your paypal settings so check there. There's a symbol like a cog and it's probably somewhere under that.
If you're not talking about automatic checkout where you don't have to sign in to paypal in order to pay, where sellers have immediate payment on their listings (not always by their choice), you don't get a 'confirm purchase' button but are better off using the cart to buy.
