Why does ebay continue to allow sellers to mark items as sent when they are notm
This is false advertising and another way ebay allows sellers to dupe buyers.

I've not said the tracking number was allocated by the seller
the tracking number would have been generated by whatever the seller used as a postage method
Ie
eBay label
Australia Post label/lodged over the counter etc

Firstly, from what i can gather, lots of companies (not just ebay sellers) can generate a postage label at their place of business or home. Then usually a day or so later, they will post it and that is when the tracking starts to show location.
So just seeing the tracking number alone does not mean it is 'on its way'. But it usually means it is being prepared, postage paid etc so it shouldn't be too long before you receive it.
However, the tracking information can occasionally run a bit behind events. That happened to me recently when a parcel had arrived a couple of days before my emails showed it as 'delivered'.
Your parcel is not yet late. It isn't even due (at the earliest) till tomorrow.
I know it doesn't sound good, that the delivery company has no record, but give it till next Tuesday and see what happens.
You have nothing to worry about. If the parcel hasn't arrived by, say, the end of next week, you can open an ebay claim for item not received. Don't close it on the seller's say so, don't close it till you either have a refund or the item has arrived. Otherwise, follow through and make the claim.

Maybe print the label closer to the time you are able to actually post it like I do

Maybe not wait almost 4 years after the topic was posted to say so?
