Most sharks, especially the larger ones, can't be eaten safely because they contain a high level of mercury. Some sharks that are commonly eaten are the dogfish, blacktip shark, bull shark, and shortfin mako.

I am not making light of the death of sharks in their own domain, here.
However, it is now reported that the Dept of Fisheries has taken over due to threats to the successful tenderer/contractor of this despicable practice.
Rubbish. It was most likely the Department that called for the tenders in the first place. And they're taking the "heat off the winning tenderer". Otherwise they,the contractor,may claim against the breaking of the contract conditions due to the dangerous "on-land-sharks" circling them.
