Do you use a crepe inside the Puff Paste to prevent the beef from drying out?

nah, it's good

 

beef

season

dijon mustard

parma ham

duxelle

crepe (also stops the juice from the duxelle steaming and making the pastry soggy)

pastry

 

serve the foie gras on the side - tastes so much better if it is seared as well rather than just stewed with the cooking juices. and you can have as much or as little as you like.

and look at the shrinkage, already! what's the good of all that empty space?

 

and look how soggy the inside of the pastry is already.

 

The steak is supposed to be moist and juicy, not the pastry.

i think that must be an old picture.
