Crikey, if you ever use a chinois for its intended purpose, you will see how handy the stand is when you are straining a sauce or a stock. Made personally, with care. Not in commercial quantities of course.
I tend to use the stand a lot as I make my own stocks and fruit sauces. Particularly with a non-functional right wrist. Much easier than holding it in the air above a bowl. If you have something, use it. It's what it is there for.
my chinois doesn't have a cap on it by the way. They come with and without that tip.
