Chicken :-p

Hi

This is a bit petty, but I'm really a lousy cook, so am after some advice.  I love fresh roast chicken sandwiches but I have been lazily buying the shredded roast breast meat from Coles (@ $20 per kg).  It's hard to get sometimes and I think I could probably make it at home a bit cheaper.

How should I cook it?  Buy straight skin off/on breasts and put them in the oven (for how long) with a bit of olive oil?  Should I buy the bone in pieces for more flavour?  Should I use any flavourings on the skin?

I would be removing the skin so maybe it doesn't matter?

Sorry if it's really boring - just after your help !!

thank you

Re: Chicken :-p

I like the chicken used in my local bakery sandwiches. They use thigh fillets, sprinkled with all purpose seasoning and cooked in the oven. Maybe try that.

It really is very easy to chuck a chook in the oven for about and hour and a half, you don't need to add anything.

Re: Chicken :-p

Our local fruit and veg does chickens roasted for $6. The following day, cold if any left, sold for $5. At that price, I don't cook chickens or buy from the deli.:-)

Re: Chicken :-p

OR... you could buy a whole cooked chook from the supermarket for about $11 and pull it apart yourself ๐Ÿ™‚

-When im cooking a chook, i line my baking dish with cooking paper.
-place the chicken on it.

- lighlty grease with olive oil (any oil will do really what ever you use will be fine)

-sprinkle with season all.

cook in middle shelf of oven covered for approx 1 hour, fan forced 180degrees C.

-take lid off and cook a further 1/2 hr to 40mins or until skin goes a bit crispy. ๐Ÿ™‚

(depends on size of chook too.. the bigger ones might need a bit longer)

walah!  there you go

another way is to place chook up and over an opened can of beer and stand upright in a baking dish in the oven... but you being a novice, might be a bit too much for you, so will save it for another day, hey  ๐Ÿ˜„

Re: Chicken :-p

If you're going to cook chicken pieces for sandwiches, then the thigh (IMO) is the moistest, tenderest part of the chicken.  But if you hate cooking, just buy a whole cooked chook from the supermarket and shred that. If you have any bits you don't use, fed them to your cat or dog (but NOT the bones!)
