Food and favorite recipes

I looked back a few pages and did not see a thread about food and favorite recipes, so I thought I would start one.  Tonights dinner was Chicken Pasta Primavera, and a tomato, fresh corn, red onion, basil and mozzarella cheese salad tossed with olive oil and vinegar dressing.  It was so good.  I'd love to see some recipes from Australia.  I'm always game to try different things.

I actually like beets so I think it would be good.  I'll give it a try sometime.

oh,sorry,i thought you had read the thread with the beets on burgers discussion. 🙂 

polly mentioned avocado on a burger,and i DETEST avocado. it tastes like dirt,like mushrooms do to me,AND beets,lol! 

i know i have an odd palate,compared to most people,and i'm just gawdawful PICKY!  weird,considering my field,lol! 

 

so,a quick recipe for baked chuck steak or roast,the kind that's about an inch thick. roughly 2 pounds. 

 

cut it into good sized( about 2"x2") chunks,and marinate for 30 minutes in a mix of soy sauce,ginger shavings ,cracked white and black pepper,coriander,rosemary,a few teaspoons of deep port, and beef broth.(1&1/2 cups total,to YOUR salt tastes) 

in the meantime,trim about  1/2 a pound of pearl onions( or new leeks,if you can get them!) and 1/4 pound of sliced mushrooms,smaller versions are better than say,portabello,lol! morelles are FAB with this dish.

put the whole shebang,mixed well,in a nonmetal casserole dish,cover with tinfoil,or a closefitting glass lid,and bake for 45 minutes at 325 fahrenheit( yes,i'm too lazy to look up the conversion for you). 

then uncover it and bake,same temp, for 30 minutes,or until the caramelization is to YOUR taste. we like a good brown,but some folks prefer golden.

serve over rice,noodles,potatoes,bread,whatever  you fancy,once you smell it! you'll know what you want in time,and start cooking it,i promise! 

this can also be made with SUPER thin sliced vidalia or bermuda onions,instead of the pearls. as i said,i'm picky. i like mild flavor added with pearls,and it's easier to pivck them out along with the shrooms.

i TOLD you,i'm PICKY!! stupid,i know,being a cook,lol!
