Good evening Pouring with rain here now, I keep getting rain fade and losing the TV signal.
It is coming in from the hills not the Sea this time.
My sister is coming to stay for a week on Sunday and she says she wants to have a swim, it is going to rain for the next ten days Hahaha.
I told her dont worry the weather forecast here is never right.

What a week it's been already ... lots of fun and activity regardless of winter returning .. but what an awful heatwave on the mainland, it's shocking and getting worse ... be careful, that sun is going to burn you very quickly and watch out for dehydration. Glad our guests are staying this far south with us, they wouldn't cope too well with that kind of heat, I don't either.

I am trying out a new recipe for dinner, this could be delicious or go horribly wrong... please cross your fingers for me lol.
Picante Chicken
Serves 6
* 6 chicken breast fillets
* 2 cups (350g) salsa
* 1/3 cup (70g) brown sugar
* 2 tablespoons honey-Dijon mustard
Preheat the oven to 175ยฐC/350F. Combine all the ingredients and place in a 30 x 20cm (12 x 8-inch) baking dish. Bake until the chicken is thoroughly cooked, 40 to 45 minutes.

Tas make sure you let it go a bit brown, but watch it doesn't burn.
I added black pepper and a sprinkle of nacho cheese and had it with penne pasta and salad.
