i just recieved 30 pounds of boneless chicken breasts,and i need help,please! i'm looking for at least 6 new recipes to supplement my own.
basically,i need 2# recipes,meatwise,if that helps,entrees for 6-10 for each. sides would be great too!!!

thanks tcm,i can load up all 3 crockpots and still use the stove! i like that idea!
witty,yes,chicken chili is definitely in the menu plan,i'm doubling that one with some of our chicken,so 1/2 will go with my hubby to work.
he says all the girls he works with are too skinny,so i feed them now and then.:)
va,i like the meatballs idea too,i'm thinking maybe in bbq sauce. maybe a cauliflower gratin to go with them.
the goal here is 15 assorted meals that can be portioned out and delivered to their shutin clients. each meal will serve 6-10 depending on how it's portioned.
i'll have to look up dakdori tang,just the name intrigues me!
i figure these folks deserve a change of pace now and then,something different than the american norm,hence this request. i've seen so many cool recipes here,and there alot of great cooks on this board,seemed like a good place to start!
tonight i'm planning to make the potpies and the vol au vents suggested,and i believe i'll make the peanut butter chicken too,all of those can be served with a fresh salad ,i think. that will probably be thursday's meal for one whole delivery circuit,that rocks!
i'm printing all the recipes so i can provide them to the folks at the lord's diner so they can make them too! they feed up to a 1000 people a day at 2 locations and via their food trucks. good people,they don't judge,they just feed people.

It's already been frozen. Why the hell would a butcher be selling frozen meat?
I'd never buy from a butcher that sold frozen meat but perhaps they have different health regulations in the US.
Having been a meat cutter for 32 years, I can tell you that you are usually getting a fresher product when you buy frozen chicken. When you buy fresh chicken, it might have been a good week from the time the chicken was killed until it hits the store. With frozen, they freeze it immediately after slaughter so bacteria has no chance to grow like it does on fresh.

Lealta, I would buy frozen meat if it was still frozen when I bought it. That way It can be stored in my freezer at home.
If it has been frozen and is now defrosted it needs to be used straight away, or else cooked and then frozen. If I buy "fresh" meat in the supermarket it had better not have been frozen.
Do you have best before dates on your packaged foods in the states?
Another easy chicken dish is Tandoori chicken made with store bought Sharwood's Tandoori curry paste. Pataks also do a Tandoori paste but I much prefer the Sharwood's one.
Use equal quantities of Tandoori paste and natural yoghurt (I used 1 tblsp of each for a few drumsticks).
Score the chicken breasts
marinate in the Tandoori paste/yoghurt mixture for 2 hours or more in the fridge.
Bake in the oven. (I did the drumsticks for about 40minutes).
Serve with saffron rice and drizzle some of the pan juice over them.

J*oono, yes we do have sell by dates in the U.S. With chicken, it generally will have about 5 days on the package. The ground meat that is ground in the store, usually has only one day. That's because it has so many surfaces, that bacteria will form very quickly. If I'm not going to use ground meat the day I buy it, I always freeze it.

Same here Lealta. Ground meat is called mince here but same thing of course. They allow usually two days for that. That reminds me, I hope I have some left over spag bol in the freezer and can have the night off.
